Potato Salad!

This creamy potato salad is perfect for any occasion, whether it’s for a picnic, a party, or for yourself. And it’s quick to make too!

Prep Time: 20 minutes      Cook Time: 20 minutes       Yields: 4 servings

Ingredients

  • 2 lbs red potatoes

  • 1 stick celery

  • 1 carrot

  • ¼ - ½ white onion

  • 200 grams mayonnaise

  • 2 garlic cloves

  • Fresh dill

  • Salt and pepper

Directions

  1. Wash and cut potatoes into 1 inch cubes.

  2. Salt a pot of water, and boil the potatoes in the pot until cooked. Drain and let cool.

  3. Dice the celery, peeled carrot, and onion. Set aside in a separate bowl.

  4. To make the dressing, mix the mayonnaise and minced garlic in a separate bowl. Add salt and pepper to taste.

  5. In a large bowl, use a plastic spatula to mix the potatoes, celery, carrots, onions, and dressing together.

  6. Sprinkle dill over the salad.

  7. Enjoy!
