Peanut Butter Banana Muffins!

These muffins are perfect for a snack or a breakfast - they’re healthy and fueling too. If you’re a fan of the famous peanut butter banana chocolate combo, then this is one recipe you definitely should try!

1¾ cups

Flour

3 Ripe 

Bananas

â…“ cup + 1 tbsp.

Vegetable oil  

1 egg

¼ tsp.

Salt

½ cup

Brown Sugar

2 tsp.

Baking powder

¼ tsp.

Baking Soda

1 tsp.

Vanilla Extract

Prep Time: 25 minutes   Cook Time: 15 minutes     Yields: 15 muffins

Ingredients

  • 1¾ cups all-purpose flour  

  • ½ cup brown sugar

  • 2 tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp salt

  • ¼ tsp cinnamon

  • 3 ripe medium Bananas

  • 1 cup smooth Peanut butter

  • â…“ cup + 1 tbsp vegetable oil

  • 1 egg

  • ½ cup milk

  • 1 tsp vanilla extract

  • ½ cup of chocolate chips

Directions

  1. Preheat the oven to 350°F.

  2. In a medium bowl, stir flour, baking powder, baking soda, cinnamon and salt. Set aside.

  3. In a separate bowl, mash the bananas. Add sugar and peanut butter, and stir until combined and smooth

  4. Then, add oil, milk, egg, vanilla and whisk until well combined.

  5. Slowly add the flour mixture to the wet ingredients.

  6. Once well combined, add chocolate chips.

  7. Line muffin tin with muffin liners. Divide into roughly 15 muffins. 

  8. Bake for 15 minutes. 

  9. Remove, let it cool, and enjoy!
