Lunchbox cakes
yummy cakes that are small enough to fit in lunch boxes!

Ingredients
Cake:

90g cake flour

2 tablespoons of matcha or cocoa powder (depending on your flavour of cake)

½ teaspoon baking powder

4 eggs
-
100g sugar
-
2 tablespoons milk
-
1 teaspoon vanilla extract (+1 for vanilla flavoured cake)
Cream Cheese Frosting:

325g cream cheese
-
300g heavy cream
-
90g sugar
Directions

Preheat the oven to 375°F and line a sheet cake pan with parchment paper, lightly spray with nonstick spray.

In a small bowl, sift flour, baking powder, cocoa or matcha powder 2-3 times until a homogeneous mixture. Set aside.

Separate the egg yolks from the egg whites into a large bowl (for yolks) and medium bowl (for whites)

In the large bowl with the yolks, add 45g of sugar and whisk using an electric mixer until well combined and is a light yellow colour. Set aside.

In the medium bowl, whisk the egg whites until foamy. Once foamy, gradually add 45g of sugar while continuing to whisk until stiff peaks form. Set aside in the fridge.

Slowly incorporate the dry mix with the egg yolk mix in two parts, using a handheld whisk or rubber spatula. Once combined, add milk and vanilla extract. Mix until combined.

Using a rubber spatula, gently fold in the egg white mixture â…“ at a time.

Once combined, pour the batter into the prepared pan.

Bake for 12-15 minutes or until a toothpick comes out clean.

Directions for the frosting:

Using an electric mixer, whisk together cream cheese, heavy cream, and sugar until smooth and well incorporated.

Separate into small bowls and add food colouring of your choice to decorate.
