Avocado Pasta!
This delicious avocado pasta is perfect for every occasion, whether you’re in a rush or are in the mood to enjoy a creamy pasta. It’s quick and easy to make - the avocado sauce takes the same time to make as the pasta to cook!

Ingredients

230 grams of pasta

1 large avocado OR 2 small avocados

1 clove of garlic

1 lime (for lime juice)

1 scallion

15 cherry tomatoes

4 pinches of dry basil

Salt and pepper to taste
Directions

Cook the pasta in boiling water. Salt the water generously.

Dice the cherry tomatoes into quarters and finely chop the scallions. Place aside for later.

In a large bowl, scoop out the avocados and mash well.

Grate the clove of garlic and squeeze the lime juice into the avocados.

Add dry basil, and salt and pepper in the avocados to taste.

Drain the pasta water and add the pasta to the avocado sauce. If the sauce is too thick, add a couple spoons of pasta water.

Add the diced tomatoes and scallions into the pasta.

Plate and serve!
